Can a person who has a demon know he/she has a demon?

Yes. Not only can you know, but others can know. Remember, the man brought his son to Jesus for deliverance knowing that an unclean spirit was manifesting in him since he was a child.
I think some examples of the presence of unclean spirits would be inordinate desires, addictions, occult manifestations (i.e. fortune telling, soul travel, etc.), bouts of depression, self-mutilation, multiple personalities... But either way, you can know. God will also reveal these things if we ask and seek Him for wisdom.

Are die-hard animal lovers under the bondage of a demon? I am thinking of people who are EXTREMELY obsessive about their pets and treat them like they gave birth to them? or the PETA organization?

I definitely think that such emotional attachments as you describe are inordinate. Our family has a dog, and we love him, but he is still just a dog. He doesn't sleep in the bed with us, eat with us, we don't dress him in human clothes, etc.
I have seen recently a show called "animal hoarders" and another show about people who treat pets like their children. To me, this is sad. We should appreciate all that God has given us, but being a living thing doesn't make a pet a human.
What is interesting is that many people who cry over animals and nature are the same ones who fight for the right to kill children via abortion. It seems to illustrate what Scripture calls "unnatural affections". They identify more with beasts than with their fellow man.
So, yes, I do believe obsessive identification with animals is demonic.
